We had taco salad tonight and I wanted a new recipe for the dressing. I found this recipe on the web and since I have been counting calories the past few months, I lowered the amount of olive oil used and added rice vinegar. It was delicious and very spicy! I analyzed new version by going to www.caloriecount.about.com Type in "recipe analyzer" in the SEARCH box.
1/4 cup fresh lime juice
1/4 cup rice vinegar
1 small clove of garlic-minced
1 Tablespoon minced chipotle peppers in adobo sauce
1/4 cup roughly chopped fresh cilantro
2 teaspoons ground cumin
Kosher salt and freshly cracked black pepper to taste
3 Tablespoons olive oil
Combine all ingredients except olive oil. Stream in olive oil and whisk until mixed thoroughly. Refrigerate until ready to use.
Serving Size-2 Tablespoons
Calories: 73 Fat: 6.9g Carbohydrates: 1.5g Protein: 0.2g
