My sister-in-law Mindy would make this yummy breakfast dish whenever I stayed with them, but I'd never tried to make them myself. I got this recipe from Marni Warren and made them for dinner tonight (we love breakfast for dinner). Much to my surprise, the kids, especially Kate, loved them (they're pretty picky kids). So, here it is:
HOOTINANNIES
Pre-heat oven to 425 degrees. Place 1/4 cup butter in a 9x13 pan to melt while oven is pre-heating
In a blender blend:
6 eggs
1 cup milk
1 teaspoon vanilla
Add 1 cup flour to blender and continue blending.
Pour into pan on top of the melted butter. Bake for 20 minutes.
Marni says she grew up squeezing fresh lemon juice on it and sifting a little powdered sugar. I've only had it with maple syrup.
